Irish Soda Bread

Source?  Someone, somewhere in Rochester when we and the world were very young.

Preheat oven 350

25 min @ 350
  5 min@ 400--that sounds backwards. You turn oven UP at the end???

  • 2 cups flour
  • 4 tsp baking soda
  • 1 tsp salt
  • 3 Tbsp shortening (margarine or Crisco?? Or butter.)
  • 2/3 cup milk...seems like this should be buttermilk for anything to happen but we just made it with milk milk
  • 1 Tbsp sugar
  • 1/3 cup raisins--be sure they are soft or else soak in hot water for a few minutes and drain well
  • 1/3 cup currents--be sure they are soft or else soak in hot water for a few minutes and drain well
  • 1 tbsp caraway seeds--optional

Mix but don't overmix--that makes it tough. It is dry. Don't add more water--that makes it tough too.

Flatten into round and bake in iron frying pan.
